Despite the low skill levels of jobs held by immigrants and by native youth and adult women, comparison among the labor processes in the immigrant, fast-food, and intermediate sectors of the restaurant industry reveals important differences in the types of jobs that these groups tend to fill. In this chapter I shall analyze the underlying influences that shape the labor supply of teenagers, young adults, and women for low-wage jobs, concentrating on the aspects that are relevant to the comparison between the labor market roles of immigrants and the members of each group. In the second part of the chapter material from the case studies as well as other empirical work will be used to discuss the effect of immigration on the employment of native youth and adult women.
